It's up to you, but i like to go with the best gram to $ ratio first. And depending on what cassette they stocked the fr10 with it might be pretty lightweight...it looks like a 11-26t so it shouldn't be too heavy even if it is low end. Im gonna refer you to this site:

It'll answer alot of questions you might have about the weight of one part vs another (just use the search function if u can't find it in one of the lists). Your bike is by no means heavy and i wouldn't worry about making it lighter so much as making it function better for the kind of riding you do on it. At your height i think ditching the heavy 40mm hussefelt stem for a nice light/strong 50mm stem would make alot of sense. I also think the white scott seat is pretty butt ugly(besides being heavy) so upgrading it IMO wouldn't be a bad idea. It's all up to you man.
If you had the money a still strong 28-30lb voltage with gears and two brakes is totally doable.

If your really concerned about weight, lose the stock wheels (the front hub is not bad at 220g though), crank, pedals, and cassette. You can lose 200 grams off the stock cassette on the bike if you go to something like an xt. lol don't blow $300 on an X0 rear derailler when it saves 10g off the x9, or buy carbon bars when they save 60g off of some alloy bars. What reason would i have to bs about the weight of my bike? I honestly just wanted a bike that would go up decently and still be strong enough to be a riot on the way down. After the most recent upgrades i thought hey might as well weigh it to find out how much weight it lost, 31.07 is what it said on the scale. The same scale that read 24.95 for my tonic howie... ru gonna suggest that my hardtail isn't 25lbs now lol?
